Guanciale Substitute

You can make dinner without guanciale — but choose the stand-in carefully so smoke and sweetness do not take over.

Best options ranked

Best overall Pancetta (unsmoked)
Best if available Fresh or cured pork jowl
Acceptable Thick-cut unsmoked bacon
Last resort Smoked bacon (expect a different dish)
Avoid for carbonara Ham, prosciutto, turkey bacon

1. Pancetta

Pancetta as the closest guanciale substitute
Pancetta is the first choice — same cure lane, different cut.

Pancetta is the default substitute because it is also Italian cured pork and usually unsmoked. Use a 1:1 swap by weight. Expect a slightly less luxurious fat and a milder finish. Details: guanciale vs pancetta.

2. Pork jowl

If your butcher sells pork jowl, you are close to the real cut. Some jowl is sold fresh (uncured) or American-smoked. Fresh jowl needs seasoning and will not taste exactly like cured guanciale, but the fat behavior is promising.

3. Unsmoked bacon

Unsmoked bacon as a guanciale substitute
Unsmoked bacon last — watch salt and sweetness.

Better than smoked. Render gently and taste before adding salt. Bacon can be sweeter and saltier, so reduce other seasoning.

4. Smoked bacon

It works for weeknight pasta, but it is no longer Roman-style. Smoke becomes the dominant note. See guanciale vs bacon.

How to adjust the recipe

  • Match weight, not slice count
  • Render slowly the same way you would guanciale
  • Hold back salt until the end
  • For smoked substitutes, lean heavier on cheese and pasta water to balance
